They originally wanted it to be only like 1 GB. It was able to be this size because only things you can see are actually there. Everything else is just a algorithm. However it will most likely end up being 5-7 GB because there are some things that are stationary.

Im working on a size comparison for video game maps but no mans sky is a little bit hard to grasp for me. The wiki says it has 256 unique galaxies and our milky way for example contains 100 billion planets.
